Here’s a simple recipe for a delicious oven-baked potato frittata that is perfect for breakfast, as well as a pre-workout or post-workout meal.

Ingredients:

  • 3 medium-sized potatoes, peeled and grated
  • 1 whole egg + 4 egg whites
  • Salt and pepper, to taste
  • 2 cloves garlic, minced
  • Fresh dill or parsley, chopped

Instructions:

  1. Prepare the Potatoes: Grate the potatoes using a coarse grater. Place the grated potatoes in a clean kitchen towel and squeeze out as much excess liquid as possible. The more liquid you remove, the better the potatoes will hold together without needing any flour.
  2. Mix Ingredients: In a bowl, combine the grated potatoes, egg, egg whites, minced garlic, chopped dill or parsley, salt, and pepper. Mix well. Let the mixture sit for about 5 minutes. The natural starches in the potatoes will help bind the mixture together.
  3. Prepare the Pan: Lightly brush or spray a pan with oil.
  4. Bake: Preheat your oven to 375-400°F (190-200°C). Spread the potato mixture evenly in the pan and bake for 30-35 minutes, or until the top is golden brown and crispy.
